Brinjal or eggplant is the most versatile and understated vegetable with many health benefits. It has vitamin c, vitamin B6, and fiber. It aids in blood cholesterol, keeps the heart healthy, and helps in weight management. Few quick and easy recipe are:1. Baigan chutney: Heat olive oil and add kalonji and jeera. When it crackles, add curry leaves and add the tomatoes. Sauté for a minute. Now add red chili powder, turmeric, and some salt according to taste. Stir for a minute. After that add the aubergines and cook for 3 to 4 minutes. Then, add tamarind, cover and let it simmer on low heat for a few minutes. Add the grated jaggery and roasted peanuts, and you are done.2. Baigan bhaja: for this recipe cut the brinjal into rounds. Now, marinate it with turmeric, jeera, coriander, and red chili powder. Add salt and amchur powder according to taste. Let it rest it for a while. Heat oil in a pan as you need to fry it deep and take it out when golden brown on both the sides. Serve with dal and rice.3. Aalu baigan: heat a pan add mustard oil to it, now add diced potatoes and fry it till soft. Take out the potatoes and add panch foodan to the oil. When it crackles, add brinjal and diced tomatoes. Cook until smooth. Now you have to add turmeric powder and red chili powder and salt. Mix well, add in the fried potatoes and cook it with the lid on.
